Brunswick Stew image

Old time family favorite. This stew will feed a small crowd or just your family and freezes well for just a heat on another day.

Number Of Ingredients 9

2 (4 lb.) stewing chickens
1 lb salt pork, sliced thin or chopped
8 c freshly cut corn
10 c sliced peeled tomatoes
4 c diced peeled potatoes
8 c butter beans (lima beans)
2 medium onions, chopped
1/4 tsp ground red pepper
salt and pepper to taste

Steps:

  • 1. Cut up chicken. Cover with water in heavy kettle; cook until meat fall off the bone, adding water if necessary.
  • 2. Add salt pork. Add vegetables and seasoning.
  • 3. Simmer slowly until tender and mixture is thick and well blended.
  • 4. Serve hot.
