Brownies with Cooked Fudge Icing image

This is a recipe my mom made when I was a kid. It is always a favorite when I make these. It is one of the few recipes, I don't try to skinny down.

BROWNIE INGREDIENTS
1 1/8 c butter, melted
6 oz chocolate, unsweetened squares
2 1/4 c sugar
5 large eggs
2 tsp vanilla extract
1 3/4 c flour
1 tsp salt
1 c nuts
QUICK FUDGE ICING
1 c sugar
1/4 c cocoa powder
1/4 c butter, melted
1/2 c milk
2 Tbsp white corn syrup
1/8 tsp salt
1 3/4 - 2 c powdered sugar
1 tsp vanilla extract

Steps:

  • 1. For Brownies: Melt butter and chocolate together. About 3 minutes in the microwave.
  • 2. Beat eggs in small bowl. Add sugar and vanilla. Mix until well blended. Add to melted butter/chocolate mixture. Mix well.
  • 3. Sift flour and salt together. Mix with nuts(optional); add last to mixture.
  • 4. Put into greased pan. Bake 25 minutes at 350ยบ or until toothpick comes out clean. Let the brownies cool before icing.
  • 5. Quick Fudge Icing Mix sugar and cocoa in saucepan. Stir in butter, milk, corn syrup and salt. Bring to full rolling boil. Boil vigorously for 3 minutes, stirring occasionally.
  • 6. Cool for about 10 minutes. Beat in sifted confectioners sugar and vanilla. Pour over brownies. The icing will harden as it cools, so work quickly.
