Broiled Tomatoes image

I use these for a side dish most of the time, but they can also be used as an appetizer. They're low carb, so they're great for diabetics. Great way to eat your summer home grown tomatoes!

Number Of Ingredients 6

3 large tomatoes
2 Tbsp shredded parmesan cheese
2 Tbsp shredded swiss cheese
dried oregano
dried parsley flakes
a little dash of salt and pepper

Steps:

  • 1. Cut tomatoes crosswise in half. Mix together the cheeses and sprinkle the cut surfaces with the grated cheeses, and a little dash of salt and pepper. Add a dash of oregano and parsley flakes on top.
  • 2. Place tomatoes in broiling pan.
  • 3. About 7 inches from heat, broil tomatoes for five minutes or until hot.
