Yield 4 servings

Number Of Ingredients 8

12 fresh super-jumbo shrimp in shells (1 pound)
flavored butter:
1/2 cup unsalted butter, at room temperature
1/2 cup snipped fresh Italian parsley
1 tablespoon finely shredded lemon peel
5-6 cloves garlic, minced
1 teaspoon cracked black pepper
1/2 teaspoon sea salt

Steps:

  • To make the flavored butter, combine the butter, parsley, lemon peel, garlic, black pepper and sea salt in a medium bowl. Using a wooden spoon, stir the mixture until well combined. Devein and shell the shrimp and make a deeper slit along its back, but not all the way through. Open to resemble a butterfly. Spoon 2 teaspoons of the flavored butter onto the cut side of each butterflied shrimp. Arrange the shrimp, buttered side up, in a large shallow baking pan. Broil 4-5 inches from the heat for 4-5 minutes, or just until the shrimp turn pink. Tranfer the shrimp to a heated serving platter and garnish with additional parsley.
