Broccoli Swiss Turkey Meatloaf Recipe Recipe - (4.8/5) image

Number Of Ingredients 10

◾1.25 Pounds Lean Ground Turkey
◾1 & 1/2 Cups Chopped Frozen Broccoli, thawed
◾1/2 Cup Red Onion, finely diced
◾1 Egg
◾1 Cup Saltine Cracker Crumbs
◾1 Tablespoon Honey Mustard
◾1/2 Cup Ketchup
◾6-7 Slices Honey Ham, Thin sliced
◾6-7 Slices Swiss Cheese-plus 2 additional slices-cut diagonally for the top
◾Freshly Ground Black Pepper

Steps:

  • 1. Pre-heat the oven to 350 degrees. 2. In medium skillet cook the onions until translucent, then allow to cool. 3. Using your hands, in a large mixing bowl, combine the Ground Turkey, Onion, Egg, Ketchup, Mustard, Cracker Crumbs and a few good turns from the Pepper mill. 4. Transfer the Turkey Meat Mixture onto a large piece of foil and begin to flatten it into a 12 x 9 rectangle 5. Next we are going to layer the filling. The filling ingredients should be about an inch from the edge so we can seal the Meatloaf. Start with the Ham slices then place the Swiss Cheese slices on top of the Ham then add the Broccoli 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out. When you have rolled to the end, pinch the ends to seal and press the meat mixture at the seam to seal. Place the Meatloaf seam side down in a large loaf pan that has been sprayed with cooking spray 6. Now we are going to roll the Meatloaf and seal the edges. Using the foil to assist you, start at one of the short ends and lift the foil while rolling. Don't roll it too tight or your filling will fall out. When you have rolled to the end, pinch the ends to seal and press the meat mixture at the seam to seal. Place the Meatloaf seam side down in a large loaf pan that has been sprayed with cooking spray 8. Let the Turkey Meatloaf cool for 4-5 minutes before slicing. You don't want your fillings to fall out! Use a sharp knife to slice the Meatloaf to ensure you are cutting through the filling evenly.
