Broccoli Salad image

I got this recipe around 2009 from a co-worker. I don't like raisins, but it sounded really good. So, decided to switch it up. I changed the raisins to craisins, the vinegar to lemon juice, cut the mayo with some sour cream and came up with this. It's always requested and one of my favorites. A really nice twist to an already great salad!

SALAD
4 - crowns, broccoli
1/2 pound(s) bacon, cooked and crumbled
1/3 cup(s) red onion, diced fine
1/2 cup(s) craisins
1/4 cup(s) dry roasted sunflower seeds
DRESSING
3/4 cup(s) mayo
1/2 cup(s) sour cream
2 tablespoon(s) lemon juice, fresh
4 tablespoon(s) sugar

Steps:

  • Cook bacon till desired crispiness. Pat dry, crumble and set aside till cooled.
  • While bacon is cooking, cut broccoli into bite size flowerets, discard all stems and place in a large bowl.
  • Add red onion, craisins, sunflower seeds and bacon. Lightly toss.
  • In a separate bowl, I use a 2 cup size measuring cup, keeps the clean up down, measure out the mayo and then the sour cream. Add fresh lemon juice and sugar. Mix to combine and taste. Depending on the strength of the lemon, you may need to add extra sugar to adjust, per your own taste.
  • Pour dressing over broccoli, gently toss to mix and refrigerate for at least 30 minutes before serving. Enjoy!
