Broccoli Cheese Soup image

This soup is creamy, rich and filling. Perfect for cool weather, too!

Number Of Ingredients 7

1 1/2 lb broccoli, fresh
2 c water
3/4 tsp salt
1/2 c cornstarch, mixed in 1 c. cold water
1 pt half and half
1 lb velveeta, cubed
1/2 tsp pepper

Steps:

  • 1. Steam or boil broccoli until tender. Remove from heat, drain and set aside.
  • 2. In heavy-bottom pot, combine half and half and 2 c. water. Add Velveeta, salt and pepper. Heat over medium heat until cheese is melted.
  • 3. Stir in cornstarch and water mixture slowly. Simmer until soup thickens. Add cooked broccoli, stirring gently until all combined. Serve hot and just look how happy it makes your family!
