BROCCOLI AND WASABI SPREAD image

Yield 1 1/2 cups

Number Of Ingredients 7

1 bunch broccoli
1 tbsp butter
1/2 onion peeled and diced
1/4 cup smooth ricotta cheese
11/2 tsp kosher salt
3/4 - 1 tsp wasabi powder/paste
1 tbsp freshly squeezed lemon juice

Steps:

  • Cut the broccoli into florets, cook in boiling water until tender, refresh under cold water and drain well Melt the butter in a small frying pan, add the onion and cook over a low heat until soft but not coloured Place the drained broccoli,cooked onion and ricotta in a food processor and blend until smooth. Add the salt, wasabi and lemon juice. Blend until well mixed, then check the seasoning. Cover and refrigerate until ready to serve.
