BROCCOLI AND POTATO SOUP image

Number Of Ingredients 11

Large yellow onion sliced thin
Salt
1/4 cup EVOO
3 tbsp butter
2 lb broccoli
1 large garlic clove, sliced really thin
4 large boiling potatoes, diced
2.5 cups meat broth (bullion ok)
black pepper
6 basil leaves, torn in small pieces
1/2 cup parmigiano-regg

Steps:

  • Put onion, large pinch of salt, olive oil, tsp butter in dutch oven on medium low until completely tender, browning. Cut up broccoli florets, wash under cold water. When onion is cooked, add garlic, cook for one minute. Add broccoli florets & a pinch of salt. Cook until tender. Add diced taters & cook for 5 minutes. Add broth, cook until taters dissolve when you stir. Add water if necc. to keep loosely creamy. Taste and correct for salt and peppr. Swirl in basil, parmigiano, and 2 tbsp of butter.
