Cacio e Pepe image

Cacio e pepe is pasta with cheese and fresh pepper.

1 (8 ounce) package spaghetti
1 cup freshly grated Pecorino Romano cheese
⅛ cup coarse ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Quickly drain pasta being careful to ensure pasta remains wet. Reserve 1/4 cup of the hot pasta water.
  • Transfer cooked pasta to a bowl and add Pecorino Romano cheese and pepper. Slowly stir in the hot pasta water until creamy. Serve immediately.
