Number Of Ingredients 8

1 pound(s) breakfast sausage, i like jimmy dean original
1 bag(s) hash brown potatoes, frozen ( doesnt matter if they are cubed or shredded)
8 large eggs
1 cup(s) milk
1 cup(s) shredded cheddar cheese
2 cup(s) fat free half and half
2 tablespoon(s) flour
salt and pepper, to taste

Steps:

  • Preheat the oven to 350 degrees. Spray a glass 9x13 pan with nonstick coating. Spread out in the pan the hashbrown potatoes. Sprinkle with salt and pepper.
  • Beat eggs and milk together and pour over the potatoes. Sprinkle the cheese on top.
  • In a skillet ( I love my cast iron one for this) brown the sausage until done to your liking, personally I like it when the edges are crispy. Sprinkle the flour on the sausage and stir. Cook a couple minutes longer until flour is well blended. Slowly stir in the half and half until rich and thick and bubbly. Add pepper to taste.
  • Pour sausage gravy over egg potatoes mixture. Do not stir! Bake for 1 hour or until eggs are set.
