Steps:
- Soak stale bread in milk. Beat together the eggs and butter then add onions and parsley. Squeeze out the bread and put it through a potato ricer or a sieve then add the egg mixture and breadcrumbs. Season it with salt, pepper and nutmeg. Set aside for a few minutes. Shape the mixture into small dumplings, and boil them in a good amount of salted water. Serve with melted butter and grated Parmesan cheese.
