BRAZILIAN FEIJOADA image

Feijoada is the undisputed national dish of brazil, it is traditionally cooked with pork ( the entire pig, in fact ) only served at noontime. It is such a heavy fat filled dish that a nap is suggested post consumption.

16 oz. can(s) black beans
1 lb lean stew beef, cut into 1
1 28 oz. can(s) tomatoes, stewed italian-style, no sodiun added
2 large cloves garlic, minced
1/2 tsp black pepper, frashly ground
2 c brown rice, cooked
1 medium onion, finely diced

Steps:

  • 1. In a Dutch oven, combine beans, beef, tomatoes, onion, garlic and 8 cups of water.
  • 2. Bring to boil over medium heat, boil 10 minutes. Skimming off foam.
  • 3. Reduce heat, cover and simmer for approx. 1 1/2 hour or until beef is tender.
  • 4. Season with pepper, stir in rice. Heat through and serve immediately.
