Steps:
- Beans: Rinse beans and soak overnight in 3 times their volume of water OR bring to a boil for 2 minutes and let stand for a full hour. Cover beans with vegetable stock. Add onion bay leaf and thyme, bring to a boil and simmer 45 minutes. Discard onion, bay leaf and thyme. In a skillet, heat oil over medium heat: cook onions, celery, carrot, garlic, salt, thyme and pepper, stirring occaisionally until softened. Stir in wine, cook for 2 minutes until almost no liquid remains. Stir in tomatoes, stock. Add beans, bring to a boil, reduce. stir in the butter.
