BRAISED PORK WITH SALSA VERDE image

1 large onion, cut into thin wedges
1-1/2 pounds boneless pork loin, cut into 1-1/2" pieces.
1-1/3c coursely chopped tomato (2 large, or 1 large can of diced tomatoes)
1 16oz jar green salsa (salsa verde)
1/2c reduced-sodium chicken broth
2 cloves garlic, minced (I use jarred)
1t ground cumin
1/4t ground black pepper
3c hot cooked brown rice
Snipped fresh cilantro

Steps:

  • 1. In a 3-1/2-4 quart slow cooker, place onion and pork. Top with tomato, salsa, broth, garlic, cumin, and pepper. 2. Cover and cook on low-heat setting for 6 to 6-1/2 hours or on high-heat setting for 3 hours. Serve with brown rice and top each serving with cilantro.
