Braised Chicken with Tomato and Herbs image

Tender and flavorful chicken that is perfect for Fall and Winter.

Number Of Ingredients 10

2 tablespoon(s) olive oil
4 - chicken legs ( separate the leg and thigh making 8 pieces)
3 cup(s) chicken stock
1 cup(s) quartered mushrooms
1 cup(s) chopped tomatoes
1/2 cup(s) chopped onions
1/4 cup(s) minced garlic ( this sounds like too much but trust me)
1/4 cup(s) white wine
1/4 cup(s) fresh chopped herbs (parsley, thyme, chives, rosemary and basil work beautifully)
- salt and fresh ground black pepper tp taste

Steps:

  • Heat a Dutch Oven to Medium heat. Season the chicken with salt and pepper and sear it in the olive oil until well browned on all sides. Remove chicken and set aside.
  • Add the onions, mushrooms and garlic and sauté for 2-3 minutes. Add the white wine and reduce by half. Place all of the remaining ingredients in the pot including the chicken and bring to a simmer.
  • Cover and place in a preheated oven at 325 degrees Fahrenheit for 40 minutes. Strain out the liquid and reduce the liquid by half, season with salt and pepper, and thicken if desired.
  • Serve immediately with your favorite vegetables and starch. If you would prefer a one-pot meal try adding 1 cup of rice to the above recipe before you bring it to a simmer.
