BOURBON(RUM) SWEET POTATOES image

6 medium-size sweet potatoes (about 3 pounds)
1/4 cup firmly packed brown sugar
1/2 cup butter or margarine, melted
1/3 cup orange juice
1/2 cup bourbon
1/2 teaspoon salt
1/2 teaspoon apple pie spice

Steps:

  • Cook sweet potatoes in boiling water to cover 30 minutes or until tender or roast. Drain. Let cool to touch; peel and mash potatoes. Combine mashed sweet potato, brown sugar, and next 5 ingredients in a large mixing bowl; beat at medium speed of an electric mixer until smooth. Spoon mixture into a lightly greased 1 1/2-quart casserole. Bake at 350° for 45 minutes or until thoroughly heated
