Turkey with stuffing is just fine for Thanksgiving, but nothing comes close to a serving of these bourbon-spiked sweet spuds. As a kid, my uncle once told me I couldn't have any because they had "firewater" in them. I'm pretty sure that was so he could have more for himself. Some people like a sticky marshmallow topping, but I think this version is a much better way to add a little spunk to the humble yam.

3 large sweet potatoes
1/2 cup sugar
1/4 cup butter, melted
1/4 cup Bourbon
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
2 large eggs
1 (5-oz.) can evaporated milk

Steps:

  • Preheat oven to 375˚. Place potatoes on baking sheet; bake at 375˚F for 1 hour or until tender. Cook slightly (about 15 minutes).
  • Reduce oven temperature to 350˚F. Peel potatoes, and mash with a potato masher until smooth. Stir in sugar and remaining ingredients until well blended and smooth. Spoon mixture into lightly greased 11- x 7-inch baking dish.
  • Bake at 350˚F for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.

3 1/2 pounds sweet potatoes, peeled and cut into 1-inch wedges
1/2 cup packed dark-brown sugar
2 tablespoons bourbon
Coarse salt and ground pepper
3 tablespoons butter, room temperature

Steps:

  • Preheat oven to 350 degrees. Arrange sweet potatoes in a 9-by-13-inch baking dish. Add sugar and bourbon and toss to combine; season with salt and pepper. Bake until sweet potatoes are tender and glazed, 1 to 1 1/2 hours, tossing every 30 minutes. Stir in butter before serving.

WHISKY (OR BOURBON) BAKED SWEET POTATOES (OR YAMS)



Whisky (Or Bourbon) Baked Sweet Potatoes (Or Yams) image

This recipe is a combination of my Dad's Candied Yam recipe and one from Gourmet. I prefer the darker sweet potato (which he called a yam) over the lighter yellow sweet potato. I like to use McClelland's Highland Scotch Whisky, but you can use any whisky/whiskey/bourbon you prefer; a friend told me she even made them with rum. I've also had good luck with making them in advance; arranging them in the dish, adding the syrup, and refrigerating them until it's time to bake them. This dish smells so good while baking: like cinnamon rolls, or the steam from a hot-buttered rum. And they taste almost like a dessert (I think they end up with a firm, custard-like consistency). At my family & friends' request, I now have to make them for every Thanksgiving and holiday meal.

3 lbs yams or 3 lbs sweet potatoes
1/2 cup brown sugar
1/2 cup sugar-free maple syrup or 1/2 cup regular maple syrup
1/4 cup butter
1/2 teaspoon cinnamon
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon kosher salt (optional)
1/3 cup Scotch whisky, to taste

Steps:

  • Grease a shallow 3qt baking dish; set aside.
  • Steam or boil the peeled yams until almost tender; cool and slice into approximately 1 1/2 inch slices (you want them to fit in a the 3qt baking dish in one layer).
  • Preheat oven to 375°F.
  • In a small saucepan, simmer brown sugar, syrup, butter, cinnamon, nutmeg, and salt over medium-low heat, stirring occasionally, until sugar has dissolved and syrup thickens, about 5 minutes; Remove from heat and stir in whisky (or other liquor of choice).
  • Drizzle syrup over yams. Cover with aluminum foil (at this point, they may be refrigerated until you're ready to bake them). Bake the yams, basting every 15-20 minutes, until syrup has thickened and absorbed (note: not all the syrup will absorb), about 1 1/4 hours. May be served hot, warm, or at room temperature.

5 large sweet potatoes (about 5 lb)
3 Golden Delicious apples, peeled, cut into 1/3-inch wedges
1/4 cup fresh lemon juice
2/3 cup packed brown sugar
1/2 cup honey
6 tablespoons unsalted butter, cut into pieces
1/4 cup bourbon
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
2/3 cup coarsely chopped pecans

Steps:

  • Heat oven to 400°F. Prick sweet potatoes with fork; place on ungreased cookie sheet. Bake 1 hour or until almost tender. Cool 45 minutes. Peel potatoes; cut into 1/3-inch wedges.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, toss apples and lemon juice. In baking dish, arrange potatoes and apples in alternating layers. Pour lemon juice from bowl over potatoes and apples.
  • In 2-quart saucepan, mix brown sugar, honey, butter, bourbon, cinnamon, salt and ginger. Heat to boiling over medium heat, stirring occasionally; boil 2 minutes or until slightly thickened. Pour glaze over potatoes and apples.
  • Roast uncovered 30 minutes. Brush potatoes and apples with glaze that collects in bottom of dish; sprinkle pecans over top. Roast 14 to 15 minutes longer or until apples are golden brown and tender.

  • Microwave sweet potatoes on HIGH 7 minutes or until almost tender, turning sweet potatoes over halfway through cooking. Let stand 2 minutes. Cut sweet potatoes into wedges.
  • Grill ribs over indirect medium heat with lid closed 1 to 1 1/2 hours or until tender, turning occasionally. Brush with some of the BBQ Sauce during last 10 minutes of cooking. Grill sweet potatoes over medium heat 2 minutes per side or until lightly browned, brushing with remaining BBQ Sauce.

1/2 cup fine aged Kentucky bourbon whiskey
2 eggs, beaten
1/2 cup pecans, chopped
1/2 cup sugar
2 tablespoons butter
1/4 teaspoon grated cinnamon
1/4 teaspoon grated nutmeg

Steps:

  • Preheat the oven to 350 degrees F. Mix all of the ingredients with an electric mixer at a medium speed until smooth. Pour all of the ingredients into a well oiled baking dish. Bake, lightly covered with foil, for 45 minutes.

This is a great make ahead recipe for those big family get-to-gathers. I often mix them the day before, adding the marshmallows and baking the day of the feast. I believe they are much better if they are refrigerated overnight or as leftovers the next day.

1 cup sugar
1/3 cup Bourbon (I usually splash in a little more)
1/2 cup butter
1/2 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Put sweet potatoes in a large sauce pan.
  • Cook over medium heat, stirring frequently until heated through.
  • Preheat oven to 350F
  • Mash sweet potatoes
  • Add sugar, butter, bourbon, vanilla and beat until well blended and smooth.
  • Turn into a 2 quart shallow baking dish
  • Sprinkle marshmallows on top
  • Bake uncovered for 30 minutes or until marshmallows are golden brown.

1 1/2 cups strong hot coffee
9 tablespoons pure maple syrup
3 tablespoons (packed) dark brown sugar
1/2 teaspoons instant espresso powder
1/3 cup bourbon
9 tablespoons unsalted butter, divided
Kosher salt and freshly ground black pepper
5 pounds red-skinned sweet potatoes (about 8 medium), peeled, cut into 2 1/2"-3" pieces
3 tablespoons olive oil
1/2 cup chopped smoked almonds (or toasted almonds)

Steps:

  • Stir coffee, maple syrup, sugar, and espresso powder in a medium saucepan over medium-high heat until sugar dissolves. Bring mixture to a boil; cook until thickened and reduced by half, 6-7 minutes.
  • Remove syrup from heat; add bourbon and 2 tablespoons butter. Reduce heat to medium and simmer until sauce is reduced to about 3/4 cup, 40-45 minutes (mixture should be thick enough to coat a spoon, but not sticky, and will thicken as it cools). Season sauce to taste with salt and pepper. DO AHEAD: Sauce can be made 2 days ahead. Cover; chill. Rewarm before serving.
  • Arrange racks in upper and lower thirds of oven; preheat to 425°F.1 Melt remaining 7 tablespoons butter in a small saucepan; pour into a large bowl. Add sweet potatoes and oil and season with salt and pepper. Divide potato mixture between 2 large rimmed baking sheets and roast, turning potatoes often and rotating sheets halfway through, until potatoes are tender and start to turn golden brown and crisp around the edges, 30-35 minutes. DO AHEAD: Potatoes can be roasted 4 hours ahead. Let stand at room temperature. Rewarm before continuing.
  • Transfer potatoes to a serving platter. Drizzle some warm sauce over and sprinkle with almonds; serve remaining sauce alongside for those who want more.
