This is a family salad we have enjoyed for many years, especially when lettuce was not available. You will love the clean fresh taste. Enjoy! Photos are my own, and so is this humble recipe.

Steps:
- 1. Wash the curly parsley and drain it. Blot with paper towels. Remove the stems. Chop very fine by hand.
- 2. Add the tomatoes, chopped fine.
- 3. Add the green onions, chopped fine.
- 4. Mix lemon juice, olive oil and salt and pour over the salad, toss to mix thoroughly. Refrigerate overnight to blend flavors. Enjoy!
