Blueberry Pie image

I love fruit pies, especially with a little vanilla ice cream, they are just one of my most favorite deserts.

Number Of Ingredients 11

4 c fresh blueberries
3/4 c sugar
1/4 c plus 1 tbsp. cornstarch
1/4 tsp ground cinnamon
1 c water
1/2 c sugar
1 Tbsp butter
1 tsp almond extract
3 drops red food coloring
3 drops blue food coloring
pastry for double crust 9-inch pie

Steps:

  • 1. Combine 3/4 cup sugar, cornstarch, cinnamon and 1 c. water in medium saucepan; stir mixture to remove lumps. Cook over medium heat, stirring constantly until smooth and thickened.
  • 2. Remove from heat; stir in blueberries, 1/2 cup sugar, butter, almond extract and food coloring. (should be a deep purple color)
  • 3. Pour blueberry mixture into the pastry shell. Cover with top crust. Trim edges of pastry; seal and crimp edges. Cut slits in top of crust for steam to escape, or make a basket weave crust. Bake at 425 degrees for 45 to minutes or just until golden brown. Yield one 9-inch pie.
