Blueberry Ketchup image

We make fruit BBQs why not make a ketchup

Number Of Ingredients 7

21/2 cup(s) blueberries
1 - small shallot minced
1 cup(s) sugar
1/2 cup(s) red wine vinegar
2 teaspoon(s) grated fresh ginger
1 tablespoon(s) lime juice
1/4 teaspoon(s) each s&p

Steps:

  • Combine all ingredients in large sauce pan cook on med-high heat. Stir and simmer till sugar desolves and berries start to breakdown, about 5min. Turn to medium low stiring occationally til sauce is thickened 20-30min.
  • Spoon into glass jars, refrigerate for four hours till thickened. Great on burgers!
