Blue Crab Meat Quiche image

Number Of Ingredients 12

1/2 pound Blue Crab Meat, fresh, frozen or pasteurized
1 piece 9" Deep Dish Pie shell
1/2 cup Green Onion, chopped
1/2 cup Fresh Mushrooms, sliced
2 tablespoons Butter, melted
4 pieces Eggs, beaten
1 1/4 cups Half and Half Cream
2 tablespoons Parsley, chopped
1/2 teaspoon Salt
1/8 teaspoon Pepper
1/4 cup Swiss Cheese, grated
1/4 teaspoon Paprika

Steps:

  • Thaw the crab meat if frozen. Drain crab meat and remove any remaining pieces of shell or cartilage from meat.
  • Bake pie shell in a hot oven, 450 degrees for 7-10 minutes or until light brown.
  • Cook Onion and mushrooms in butter until tender, drain.
  • Combine crab meat, onion and mushrooms, eggs, cream, parsley, salt and pepper.
  • Pour into pie shell and top with cheese and sprinkle with paprika
  • Bake in a moderate oven, 350 deg for 50 min to 1 hour or until knife when inserted in the center comes out clean.
  • Remove from oven and let stand for 10 minutes
