BLACKBERRY PORT SAUCE FOR ROAST DUCK image

about a cup of blackberries fresh or frozen
port wine
balsamic vinegar
small diced shallot
brown sugar
s/p tt
a dash or two (maybe more if you like sweet) of honey
and butter at room temperature to finish the sauce, cut up. use as much as you'd like.

Steps:

  • throw everything but the butter into a non-reactive sauce pot and let reduce, stirring occassionally. always taste to see how it is. It should be sweet and tangy and fruity. when it's been reduced, add in the butter slowly and whisk over low flame. It is recommended to strain this sauce. the end result should be a dark, glossy sauce. If desired, you can throw in some thyme during the reduction process. And this could also be used for a sauce over your favorite icecream!
