BLACK MAGIC CAKE FROSTING image

Number Of Ingredients 8

Frosting/Filling:
1 cup heavy cream
1 stick (8 tablespoons) unsalted butter
1/3 cup granulated sugar
¼ teaspoon salt
16 ounces semisweet chocolate, cut into small pieces (or use chocolate bits)
¼ cup very strong brewed coffee
1 teaspoon vanilla extract

Steps:

  • Frosting/Filling: 1. Combine the cream, butter, sugar, and salt in a saucepan and bring to simmer over low heat. 2. Remove from heat and whisk once to make sure butter is melted. 3. Add chocolate, stir and let sit for 5 minutes or so to allow chocolate to melt. 4. Whisk frosting just to smooth out. 5. Add coffee and vanilla and stir to combine. 6. Cool frosting in refrigerator for hour or so until of spreading consistency. (If frosting gets too hard, place in double boiler and heat until proper consistency.) Assembling cake: 1. Place one layer right side up on plate. 2. Spread some chocolate frosting. 3. Spread apricot preserves and almonds on top of frosting 4. Place second layer on top 5. Spread top and sides with frosting. Note: there will probably be extra frosting left over. You can reduce the amount of frosting in the recipe if you want. Or you can pile the frosting on!!
