1 T unsalted butter
6 lg egg yolks
6 T white sugar
1 1/2 C whipping cream, chilled
4 T dark brown sugar

Steps:

  • 1. Adjust oven rack to center position and heat oven to 275. Butter six remekins and set them in a glass baking pan. 2. Whisk yolks in medium bowl until slightly thickened. Add white sugar and whisk until dissolved. Whisk in cream, then pour mixture into prepared ramekins. 3. Set baking pan on oven rack and pour warm water into pan to come halfway up the ramekins. Bake uncovered until custards are just barely set, about 60 min. 4. Leave ramekins in the hot water to cool to room temp.
