Bell Pepper Casserole image

My Mom always made this for us kids when we were growing up. It's like a stuffed bell pepper without all that hassle!

Number Of Ingredients 8

1 lb ground beef
1/3 c finely chopped bell pepper
1/3 c finely chopped onion
1/2 c uncooked rice
2 c hot water
6 oz can tomato paste
1 1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. Heat oven to 350.
  • 2. Brown meat over medium heat in a large skillet; drain fat and crumble with fork.
  • 3. Add bell pepper and onion to meat and stir to combine.
  • 4. Add rest of ingredients**. Stir till well mixed. Pour into a 2-Quart baking dish with a lid. Cover and bake 1 hour.
  • 5. ** When adding the rest of the ingredients, I always put them in a bowl first & mix together before adding to the meat mixture.
