Beets in Orange Butter image

Number Of Ingredients 6

6 small cooked beets
3 tablespoons unsalted butter
1/4 cup fresh orange juice
1 tablespoon grated orange peel
Coarse salt and freshly ground pepper to taste
2 tablespoons fresh tarragon or parsley leaves, chopped

Steps:

  • While the beets are cooking, prepare the butter. Melt the butter, add the orange juice, peel, salt and pepper and tarragon or parsley. Mix thoroughly.
  • Slice the cooked beets or chop them in the food processor. Pour on the butter sauce and serve.
