Beet and Carrot Ceviche image

I had some left over beets, so why not!

Number Of Ingredients 6

2 large beets
2 cup(s) carrot, shredded
2 large limes, juiced
2 tablespoon(s) cilantro, fresh, minced
2 clove(s) garlic, minced
1/2 teaspoon(s) cayenne pepper

Steps:

  • Rinse the beets and cut them into small straws.
  • Mix the prepared beets with the lime, herbs, cayenne pepper and garlic.
  • Let it sit for about 15 minutes and add more lime and cayenne to taste (the beets soak it up).
  • Add the carrots toward the end so they stay orange.
