Beef Gumbo Rice image

A college roommate of my husband's used to make this for them. It's quick, super easy and has become a favorite in our house. The kids always loved it when we had gumbo rice night. It isn't spicy at all, so you could adjust that if you wanted. Serve with a salad and some crusty French bread for a complete meal.

3-4 can(s) campbell's chicken gumbo soup
1 lb ground beef, browned and drained
To taste salt and pepper
2 c instant rice

Steps:

  • 1. Brown ground beef and drain.
  • 2. Add cans of soup and salt/pepper. The Campbell's is hard to find. 2 of the chunky gumbo soup with sausage works.
  • 3. Serve over hot, cooked white rice.
