BEEF BARLEY AND VEGETABLE SOUP image

Yield 4 quart sealers

Number Of Ingredients 15

2 tbsp olive oil
2 cubes freezer garlic
2 celery stalks- cubed
1 large onion-coarsly chopped
1 large potato- cubed
1 large wedge of turnip-cubed
3 medium carrots-cubed
1 large parsnip- cubed
1/2 tsp thyme
1 large bunch fresh rosemary leaves- clipped
1/4 cup red wine
1 tbsp Lea & Perrins
1/2 pearl barley
1 28 oz can diced tomatoes- herb and spices
3 14oz cans beef broth

Steps:

  • Place oil in large soup pot and add onion, garlic and celery. Simmer 5 minutes. Add rest of veggies (except potato) and simmer with broth, tomatoes and spices. Add Lea and Perrins, wine and barley and cook for 30 minutes. After 15 minutes cooking time, add potato to soup. Salt and pepper to taste.
