Beef and Black-Eyed Pea Casserole image

I like to use this as alternative to plain black-eyed peas on New Years Day. Sort of like hoppin-john but with ground beef!

Number Of Ingredients 10

1 pound(s) ground round
1 large garlic clove, minced
2 can(s) (15 ounce) black-eyed peas with jalapenos, drained
1 can(s) (16 ounce) chopped tomatoes, drained
2 cup(s) cooked rice
1 cup(s) cheddar cheese, shredded (4 ounces)
1/2 cup(s) minced onion
1 tablespoon(s) butter, melted
1/2 teaspoon(s) salt
1/2 teaspoon(s) black pepper

Steps:

  • Brown the ground round and garlic in a large skillet over medium heat, stirring until the meat crumbles. Drain and place in a large bowl.
  • Add the black-eyed peas and remaining ingredients; stir well.
  • Place the mixture in a lightly greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 20 minutes.
