Becky's Cream Cheese Muffins image

These muffins started off being an experiment. I had no clue what I was going to make. All I know is that I wanted some sort of cream cheese muffins. Next thing I know these tasty treats were comming out of the oven. These muffins are not very pretty, but they are pretty good. I think a nice simple sugar or fruit drizzle on them...

MUFFIN BATTER
3 c all purpose flour
3/4 c sugar
4 tsp baking powder
8 oz cream cheese
2 lg eggs
1 c milk
1 tsp vanilla extract
1/2 c butter, melted
1 c chopped pecans or walnuts
extra sugar (for sprinkling)
extra cream cheese (approx. 4 oz.) (optional)
STREUSEL TOPPING: (OPTIONAL)
2 Tbsp all purpose flour
2 Tbsp brown sugar, firmly packed
2 Tbsp butter, softened
2 Tbsp chopped pecans or walnuts
1/4 tsp ground cinnamon

Steps:

  • 1. Preheat oven to 400°F. Grease a standard size muffin tray.
  • 2. Sift dry ingredients and combine.
  • 3. In a blender combine the cream cheese and eggs, blend until smooth. Add milk, vanilla and melted butter and continue to work the batter until completely mixed. Pour liquid ingredients into the bowl of dry ingredients and mix with wooden spoon until they are completely combined. Streusel Topping: In a small bowl stir together flour, brown sugar, and cinnamon. Cut in butter until the mixture resembles coarse crumbs. Stir in chopped pecans or walnuts.
  • 4. Spoon batter into muffin cups piling batter up to the top.
  • 5. Add approximately 1 teaspoon size piece of cream cheese into the center of the muffin top.
  • 6. Sprinkle muffin tops with streusel topping and a little extra sugar.
  • 7. Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Serve warm.
