BEANS WITH SAGE AND TOMATOES image

Number Of Ingredients 5

4 15 oz cans white beans OR 1 lb dry cannellini beans, cooked OR 4 lb fresh shell beans, cooked
1/4 cup olive oil
2 cloves garlic, crushed with flat of knife
6-8 large fresh sage leaves or 1 tsp dry sage
1 15 oz can chopped tomatoes

Steps:

  • Drain beans well and set aside. Heat oil over medium high heat and saute garlic and sage, stirring often until garlic is golden. Remove and discard garlic Add tomatoes and their liquid to the pan, then add beans. Simmer uncovered, stirring to keep from sticking as needed until beans mash easily and mixture looks creamy (20-25 minutes) Season to taste with salt and pepper.
