BBQ Pork Burritos image

Got a free tub of the shredded bbq pork and didn't know what to do with it. This recipe was on the side of the container so thought I would try it. Will let you know what my guinea pig ...ah er..my husband thinks about it. :) Update: Loves them!

Number Of Ingredients 6

16 ounce(s) can refried beans
6 - 10 inch flour tortillas
18 ounce(s) lloyd's barbeque shredded pork
3 cup(s) shredded cheddar cheese divided
1 cup(s) la victoria thick'n chunky salasa (medium)
- sour cream, slice ripe olive and additional salsa if desired

Steps:

  • Place 1/4 cup beans in the center of each tortilla, Top each with 1/4 cup pork, then 1/4 cup cheese.
  • Fold one end of each tortilla up 1 inch over the filling, then fold right and left sides over folded end overlapping. Fold remaining end down. Arrange the burritos seam side down in a microwave safe dish.
  • Top each burrito with 1/4 cup cheese
  • Top each burrito with 1/4 cup salsa.
  • Cover loosely with plastic wrap
  • Microwave on high for 5 minutes, rotating the dish 1/4 turn after 3 minutes
  • Top with remaining ingredients
