BBQ Chicken Fingers image

A bed of spinach leaves topped with Parmesan-encrusted chicken and a sugar-free BBQ sauce is a Healthy Living recipe done right.

Number Of Ingredients 7

1/4 cup KRAFT Grated Parmesan Cheese
1/4 tsp. ground black pepper
1/8 tsp. ground red pepper (cayenne)
1 lb. boneless skinless chicken breasts, cut into strips
1/2 cup sugar-free barbecue sauce
1/2 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses
1 pkg. (6 oz.) baby spinach leaves (about 7 cups)

Steps:

  • Heat oven to 400ºF.
  • Mix Parmesan and seasonings. Add to chicken; toss to coat. Place in shallow pan.
  • Bake 10 to 15 min. or until chicken is done; top with barbecue sauce and cheese. Bake 5 min. or until cheese is melted.
  • Serve over spinach.
