Steps:
- Combine first 4 ingredients in a medium saucepan and bring to a boil. Cover, reduce heat and simmer about 15 minutes. Meanwhile, in a large skillet, sauce onions in butter or olive oil over medium heat. Salute, stirring occasionally, until onions are golden, about 15-20 minutes. Season to taste with salt and pepper. Stir in cranberries or cherries. When rice has absorbed all the broth, discard bay leaf. Stir in caramelized onion mixture. Top with almonds and serve.
