BARLEY AND PINE NUT CASSEROLE image

Number Of Ingredients 8

1 C barley
6 T butter
1/4 - 1/2 C pine nuts or slivered almonds
1 med. onion, chopped
1/4 C. minced chives
1/4 t each salt and pepper
28 oz chicken broth
1/2 C parsley for garnish

Steps:

  • Rinse barley and drain well. Fry nuts until lightly toasted in T of butter. Add rest of butter (remove nuts), onion, and barley. Cook until toasted. Remove from heat and add nuts, parsley, chives, salt and pepper. Heat broth to boiling, pour over barley, mix well and bake uncovered in 375 oven for 70 minutes.
