BANANA CEVICHE image

6 Large green bananas
3/4 cup of fresh lime juice
1 Large Tomato - diced
A Handful of Cilantro - chopped
8 Cloves Garlic - chopped
1 Medium Onion - chopped
1 jalapeno pepper - chopped
1/2 cup chopped red bell pepper
1 Tbsp Salt
3 Tbsp Sugar
1 Green Onion - diced

Steps:

  • Peel and slice bananas into bite sized pieces. Boil bananas for about 5 minutes or until semi-soft Use a slotted spoon to remove bananas to a bowl to cool Once slightly cooled add salt and sugar and gently mix Keep reserve liquid handy. Place in a bowl the lime juice, onion, garlic, jalapeno, bell peppers and cilantro Mix together Pour this over the cooled bananas and mix Use reserve liquid to make the it more soupy if you want Put in fridge for a minimum of 1 hour to let flavors mix together. Serve chilled with sliced green onion as garnish
