Balsamic Roasted Sweet Potatoes image

Short on time so tried this recipe and fell totally in love. Simple, fresh and very easy. This will be my go-to sweet potato recipe from here on out instead of doing the brown sugar, butter and marshmallows. Everyone that tried it agreed that it was fabulous! I used Honey Ginger Balsamic Vinegar since I had it on hand.

3 sweet potatoes, peeled and cut into bite-size pieces
1/4 c balsamic vinegar
1 Tbsp brown sugar, firmly packed
4 Tbsp butter or margarine
1 tsp salt

Steps:

  • 1. Pre-heat oven to 400 degrees. Cook vinegar and brown sugar in a heavy saucepan over medium high heat, stirring frequently till sugar is dissolved and the mixture is syrupy and slightly thickened. Add butter & salt and stir till butter is melted and incorporated into vinegar mixture.
  • 2. Place sweet potatoes in the vinegar/butter mixture and stir to coat well. Pour out onto a rimmed baking sheet. Sprinkle lightly with freshly ground black pepper.
  • 3. Bake for 35-40 minutes or until tender, stirring once.
