Balsamic Honey Roasted Veggies image

Number Of Ingredients 6

2 1/2 pounds any combo of veggies
2 tablespoons EVOO
1/4 teaspoon sea salt, coarse (to taste)
1 pinch ground pepper, fresh to taste
2 tablespoons balsamic vinegar
2 tablespoons honey

Steps:

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper or a baking mat.
  • Put all chopped veg in a bowl and add olive oil. Toss til well coated. Place on baking sheet and season with s and p
  • Roast for about 20 minutes before giving the pan a shake to toss and turn the veggies. Continue to road for another 10 to 15 minutes.
  • When veggies are just golden brown and fork tender, remove from oven. Drizzle with balsamic vinegar and honey (mixed together) evenly over veggies. Return to oven for 5 to 10 more minutes or until balsamic vinegar has sweetened and the honey has started to caramelize.
