Baked Ziti With Fresh Spinach image

This is an easy and flavorful meal that is a spaghetti or lasagna alternative. Serve with garlic bread.

21/2 c penne pasta
2 small onions chopped
2 clove garlic- chopped
1 lb ground beef
1 pkg fresh baby spinach
1 can(s) spaghetti sauce
3-4 Tbsp prepared pesto
2-3 c mozzarella cheese
1/4 c parmesan cheese

Steps:

  • 1. In large skillet brown ground beef, onions and garlic- drain off fat and stir in pesto and then add spaghetti sauce and stir well.
  • 2. While cooking beef mixture boil water for pasta and cook pasta according to package directions to al dente. Drain pasta in colander.
  • 3. Stir drained pasta into meat mixture and simmer.
  • 4. Spray 3 quart casserole with cooking spray- Add layer of meat & sauce mixture then add a generous layer of spinach and pasta and layer of mozzarella cheese and add remaining meat mixture.
  • 5. Top with remainiing mozzarella cheese and sprinkle with parmesam cheese.
  • 6. Bake uncovered in 365 degree oven for 40 minutes.
