BAKED ZITI WITH FIRE ROASTED TOMATOES image

Number Of Ingredients 11

½ lb extra-lean ground turkey or beef
1 cup chopped sweet onion
2 cloves garlic, finely chopped
1 medium zucchini, cut in half lengthwise, sliced ¼ inch thick
1 head broccoli, chopped
1 can (15 oz) tomato sauce
1 can fire roasted diced tomatoes, drained
2 teaspoon fresh oregano leaves
¼ teaspoon each salt and pepper
8 oz (2½ cups) ziti pasta, cooked
¾ cup shredded reduced-fat mozzarella cheese

Steps:

  • Heat oven to 375 F. Spray 2-qt rectangular glass baking dish. In 10-inch nonstick skillet, cook meat, onion and garlic over medium heat, stirring frequently, until thoroughly cooked. Add zucchini and broccoli; cook 2 minutes. Stir in tomato sauce, diced tomatoes, oregano, salt and pepper. Heat to boiling. Toss with pasta. Spread in dish. Cover with foil; bake 20 minutes. Sprinkle with cheese. Baked uncovered about 5 minutes or until cheese is melted.
