BAKED LENTIL CASSEROLE image

Number Of Ingredients 12

1 cup onion, chopped
2 cloves garlic, minced
1 3/4 cups lentils, uncooked
2 cups water
1/4 teaspoon pepper
2 cups tomato, canned
2 large carrots, sliced 1/8" thick
1/2 cup celery, thinly sliced
2 c. cheddar or Monterey Jack cheese, shredded
1 green pepper, chopped (optional)
2 tablespoons parsley (optional)
1/4 pound fresh broccoli (optional)

Steps:

  • 1. Rinse lentils. 2. Combine lentils, water, pepper, onion, garlic, broccoli, and tomatoes in baking dish. 3. Cover lightly, bake at 375 degrees F. for 30 min. 4. Stir green pepper, broccoli, and parsley into casserole. 5. Top with cheese. 6. Bake uncovered for 5 min. or until cheese melts.
