Baked Lasagna Casserole image

A basic lasagna for the whole family to enjoy. May serve with garlic bread and salad if desired.

1 lb ground beef
2 Tbsp salad or olive oil
1 medium onion
1 clove garlic
1 tsp parsley, chopped
2 6 ounce cans tomato paste
2 c water
1/2 tsp salt
1/2 tsp pepper
8 oz lasagna noodles, cooked
2 eggs
3/4 lb ricotta cheese or creamed cottage cheese
3/4 lb mozzarella cheese, shredded
parmesan cheese, grated

Steps:

  • 1. Brown ground beef in oil with onion, garlic and parsley.
  • 2. Add tomato paste, water, salt and pepper and simmer for 1 hour.
  • 3. Meanwhile, cook and cool noodles as directed on package.
  • 4. Mix together eggs and ricotta (or cottage cheese).
  • 5. In a 9 X 13 inch baking dish, spread about 1/2 cup meat sauce, then alternate layers of lasagna noodles, sauce, egg mixture and mozzarella until baking dish is filled.
  • 6. Top with more sauce and sprinkle with parmesan cheese.
  • 7. Bake at 375 degrees F for 20 minutes.
