BAKED HAM WITH PINEAPPLE SALSA image

1 fat ham slice
8 ounce can crushed pineapple, drained, reserving juice
1/2 cup dried currants or cherries
3 Tablespoons Marmalade
2 Tablespoons chopped cilantro
1 Tablespoon minced Jalapeno peppers
2 Tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Bake ham slice with reserved pineapple juice in a 350 degree oven until cooked through. Meanwhile, stir together remaining ingredients including crushed pineapple to make salsa. Serve ham with salsa on top or on the side.
