Bacon-Wrapped Potato Appetizer image

Potato slices wrapped in bacon pose as chips when they're dipped in a mix of sour cream and chives. Serve as a side dish at dinner or as an appetizer.

2 large Yukon gold potato es (1 lb.)
8 slices OSCAR MAYER Bacon, cut in half
freshly ground black pepper
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 Tbsp. snipped fresh chives

Steps:

  • Pierce potatoes with fork. Microwave on HIGH 6 min. to partially cooked. Cut small slice off ends of potatoes; discard. Cut each potato into 8 slices. Wrap bacon piece around each potato slice, overlapping ends under potato.
  • Place, seam-sides down, in large skillet.
  • Cook on medium heat 12 to 14 min. or until bacon is done and potatoes are tender, turning after 7 min. Drain on paper towels. Season with pepper. Mix sour cream and chives; serve as dip with potatoes.
