Bacon-wrapped chicken, stuffed w/ spinach image

A simple, yet yummy chicken dish I've been making for years. I usually serve this w/ rice pilaf.

Number Of Ingredients 6

1/2 cup(s) mayonnaise
1 - 10 oz pkg frozen chopped spinach, thawed,squeezed dry
1/2 cup(s) crumbled feta cheese
2 teaspoon(s) minced garlic
4 - boneless, skinless chicken breasts
4 slice(s) bacon

Steps:

  • Heat oven to 375. In medium bowl, mix together mayonnaise, spinach, feta and garlic.
  • Slice each chicken breast in thickest part w/out going all the way through. Spoon spinach mix into chicken pockets.
  • Wrap each chicken breast w/ a slice of bacon. Secure w/ a toothpick. Place chicken in a shallow pan. Cover w/ foil. Bake about 1 hr, or until juices run clear.
