CUCUMBER GINGER SALAD image

1 cup peeled, seeded, and thinly sliced cucumber
1/3 cup coarsely chopped pickled ginger
3 tablespoons pickle juice (juice that the ginger was in)
3 tablespoons rice wine vinegar
2 tablespoons chopped fresh dill, without stems
Freshly ground white pepper to taste

Steps:

  • Mix the cucumber slices with the ginger, pickle juice, and rice vinegar. Mix in the dill, season with white pepper, and serve.
