Bacon & Sweet Potato Hush Puppies W/ Creamy Dip image

Number Of Ingredients 12

CREAMY DIP:
1/4 cup(s) sour cream, fat-free
1/3 cup(s) honey mustard
1 teaspoon(s) lemon juice
HUSH PUPPIES:
1 - 8 oz box(es) corn bread mix
1/4 cup(s) cornmeal
1 medium onion, finely chopped
1 x large egg
1/2 cup(s) mashed sweet potatoes
6 slice(s) bacon cooked crisp & crumbled
- vegetable oil

Steps:

  • DIP: Combine all ingredients together in a medium bowl; mix well. Refrigerate until ready to use.
  • HUSH PUPPIES: Preheat deep fryer with oil to 350 degrees F.
  • In a large bowl, combine corn bread mix, cornmeal, onion, egg, sweet potatoes & bacon; mix well. Using a small ice cream/cookie scooper, drop batter into hot oil, about 4 at a time, until golden brown, about 3 - 4 minutes. Remove & drain on paper towels. Repeat with all batter.
  • Serve with creamy dip.
