BACON CURRY COLESLAW image

1/2 cup mayonnaise
1 tablespoon vinegar
1 teaspoon sugar
1/2 teaspoon curry powder
3 cups shredded cabbage
1/4 cup raisins
2 tablespoons sliced green onion
4 slices bacon, crisp-cooked, drained, and crumbled
1/4 cup salted peanuts

Steps:

  • Combine mayonnaise, vinegar, sugar and curry powder. Cover and chill. Combine cabbage, raisins, and green onions; cover and chill. Just before serving, combine cabbage mixture, bacon, and peanuts in a bowl. Add mayonnaise mixture to cabbage; toss well to coat.
